Gift cards are easy to forget once they are partly used. Keeping every balance in one list makes it obvious how much you can spend at each store.
When paying, cashiers can usually split a purchase across several gift cards and then take the rest by card or cash. The planner shows the exact amount to charge to each card.

Some cards lose value through fees or have purchases you did not record. Check the balance with the retailer and update it here.
Rules vary by country and state. Many places protect gift cards from expiring for several years, but promotional cards often expire quickly. Add the date printed on the card.
